Recipe Submission : After-School Snack Attack

Here’s a recipe that a member of our community submitted for our “Healthy Recipe Contest”. It looks delicious, so I wanted to be sure to share it with the rest of our community.

It’s called ‘After-School Snack Attack’ and is a shake. It looks like it would be a great quick and filling snack to welcome your little Einstein home from school with a tall glass of this chocolatey smoothie. It is nutritious and quick to make between getting home from school, and rushing off to soccer/football/basketball practice!

 After-School Snack Attack Shake

  • 1/2 cup soft silken tofu
  • 3/4 cup chilled chocolate rice milk
  • 1/2 cup chocolate sorbet
  • 1 frozen banana, sliced
  • 1/4 cup toasted pecans (optional)
  • 1/4 cup miniature marshmallows (optional)

Combine the tofu and rice milk in a blender. Add the sorbet and banana. Blend until smooth. Add the pecans and marshmallows, if you like, and blend to the desired consistency.
